Medium roasting highlights the sugar browning character of classic \u003cem\u003eCastillo, Caturra\u003c\/em\u003e, and \u003cem\u003eColombia\u003c\/em\u003e varieties, making for a cup of superlative sweetness. Think rich cocoa, nougat, and sweet almond with a little floral spice in the finish. Harvested in the November - December timeline, Huila's main crop is the larger of southern Colombia's two harvests that keep fresh coffee possible all year round from one of our favorite countries of origin.
