We Taste - Maple syrup, peach pie, juicy sweet
Micromills of Costa RIca's cooler Pacific-facing West Valley are famous for producing unique coffees, with this incredible microlot exemplifying this well-awarded region's acclaim. Run by two sisters and their spouses, Cerro San Luis Micromill receives freshly-harvested and sorted SL-28 (Kenya variety!) cherries from nearby Finca El Venado and immediately de-pulps and removes most, but not all of the sticky sweet mucilage. Initially dried on raised beds before being slowly dried under covered patios, the gently fermenting White Honey process coffee begins to develop richly sweet flavors and body, reminding us of our favorite fall flavors. We taste huge sweetness and juiciness balanced by medium roasting that brews a perfect cup across all methods.
