You might remember an Arabica variety we roasted last season called Pacamara. Say hello to its parent variety, Maragogipe. This natural Typica mutation from 1870 Brazil is known for its large seed size and high quality potential, yet low yields make it one of the rarer varieties. Producer Mauricio Salaverria recognizes the potential and cultivates varietal microlots on his farm, the famous Finca Himalaya. Set high in El Salvador's Apaneca mountain range, the clay / volcanic soil mix, as well cypress and pine andinga shade trees create an ideal setting for healthy cherry maturation. Once ripely-filled with sweetness, the Maragogype cherries undergo a specific honey process of being gently de-pulped and dry fermented for 20 hours, before drying on raised beds for 23-25 days. Light-medium roasting carries forward candied sweetness, purple fruit, and heightened fermentation to its sweet conclusion.
