Johny Lemus' pursuit of quality leads him to cultivate exceptional, if not risky* varieties like this Pacamara microlot. His farm San Antonio resides at 1350 meters, allowing the cool nights of Chalatenango to instill great complexity in his harvest. Lemus' natural process (whole berry coffee dried intact) amplifies a lightly fermented sweetness, harmonizing with Pacamara's tropical citrus and sugar-browning aromatics to create a sweet, fruit-forward cup that brews perfectly across filter methods.
