The western region of Huehuetenango features the highest elevations in Guatemalan coffee. In these often cooler highlands, coffee berries mature more slowly, gaining complexity in brightness and flavor. Producers pick, de-pulp, ferment, wash, and dry their fresh harvest, before delivering it to Dinamica Coffee, which destones, hulls, and sorts for quality. The resulting regional blend plays well at medium and dark roasts, a classically-balanced Huehue of rich sweetness, bright acidity, and fermented fruit. This fresh-crop medium roast brews nicely across methods and "normale" espresso pulls.
