Working together to care for their land and each other, the forty farmer-partners of La Cooperativa Corpus Cristhy Illampu organically grow and produce a beautifully sweet, clean coffee. After each ripe picking, the farmers sort the Red Catuai and Typica berries, then pulp, wet ferment, and sun dry for two weeks before shipment to the collective dry mill. Medium roasting coaxes out sugar browning development to highlight this Fair Trade coffee's sweet, creamy character - a popular profile for batch brews and "normale" espresso pulls.
