Fully washed coffees from the Department of Huila are eminently likable. Grown by twenty producers at an equatorial medium-high elevation, Huila's Excelso grade stands out for its clean, balanced flavor and medium body. Smooth and creamy, yet vibrantly complex, this lot features a kiss of fermentation amongst citric (sweet lime) and malic (cherry) acidities. Medium roasting highlights the sugar browning character of classic Castillo, Caturra, and Colombia varieties, making for a cup of superlative sweetness. Think rich chocolate, vanilla, and sweet nutty flavors that come together like Kahlua. Harvested from June through August, Huila's mitaca is the smaller of southern Colombia's two harvests that keep fresh coffee possible all year round from one of our favorite countries of origin. Given a week off-roast, this super sweet Huila lot extracts nicely across all brewing formats.
Roast: Medium - A week off-roast yields sweet, balanced cups.
Process: Fully Washed - The coffee is picked ripe and depulped the same day, then open-air fermented in tanks between 12–36 hours. The fermented coffee is washed clean of its mucilage before being dried on patios, in parabolic dryers, or solar driers.

Elevation: 1400-2000 masl - The range in elevation produces great complexity.

Producers: ~20 local producers - Huila produces 20% of Colombia's coffee, yet 80% of coffee producers farm on less than three hectares.
