Neighbors told Aristides Guarnizo that he'd never find success producing specialty coffee. Fast-forward ten years to see this young cafetero grow his 10 hectare plot into two farms, aptly named El Progresso ("The Progress") and La Cumbre ("The Top"). Never content to maintain the status quo, Aristides pushes forward with new varieties, processes, and organic, environmental renewal (self-made compost and microorganism teas to replace the use of chemical fertilizers and pesticides). This microlot showcases his exciting experimental work with anaerobic (low oxygen) fermentation. The use of airtight barrels to ferment the coffee cherries allow robust fruit flavors to develop, while amplifying acidity and body. Our light roast touch brings a significant malic juiciness and jammy orange fruit to bear, making this high elevation microlot ideal for brighter by-the-cup brewing.
