Operated by the Delgado siblings, Alejandro and Magali, this mill sources freshly harvested cherries from their own farms, processing them with meticulous care. The Yellow Honey method—where cherries are de-pulped and partially dried with mucilage intact—creates a distinctive profile. Slow drying on raised beds and covered patios allows controlled fermentation to develop complex notes of spiced brown sugar, chocolate malt, and richness in body. The result balances syrupy sweetness with bright acidity, delivering versatility across brewing methods and roast levels.
