Mustefa Abakeno takes the road less traveled as a smallholder farmer from Jimma. From managing his a 18-hectare farm in Western Ethiopia to starting a direct-to-buyer export business and founding mill stations, Mustefa now produces his neighbors' coffee cherries to bring larger quality-focused lots to market.

As an increasing number of local farmers interested in his mission, Mustefa made it easier to deliver with four additional purchasing sites. An increased capacity to source exceptional coffee cherries has cemented his role as a catalyst for community development.

Mustefa's eye for detail and producing experience show at the two main processing stations, Beshasha and Kabira. To next level his production, Mustefa began working with an agronomist named Harun from importing partner Falcon Coffee. Harun helps local farmers with good agricultural practices. He also sparked a few key drying initiatives from shade netting to regularly monitoring moisture levels of parchment. 

Mustefa's partnership with the Falcon team in Addis Ababa exemplifies the potential for enhancing coffee quality through direct relationships, streamlining the supply chain, ensuring that a significant portion of the proceeds directly benefits the producers.

At 2,040 meters above sea level, Mustefa's JARC varieties exhibit a striking acidity that hits like sweet lime juice. A berry tea aromatic and wildflower honey sweetness bring balance to a clean, high-clarity washed process that excels at 2-3+ weeks off-roast. Light roasting makes this bright lot Ideal for pour overs, immersions, and as a longer shot of espresso.

Roast: Light - Rest ~2 weeks prior to brewing for best results.
Process: Washed - 1)Cherry delivered & floated to remove immatures 2)Cherry depulped 3)Fermented in tanks for 8 -12 hours 4)Washed and cleaned in channels that separate floaters from parchment 5)Dried under shade - coffee sorted for initial defects which is easiest when the coffee is still wet (50% moisture) 6)Dried on raised beds for 7 - 10 days being covered with shade netting from 11am - 2pm each day
