We Taste - Bergamot, yellow peach, Key lime
Single farmer lots from Halo Beriti Washing Station have been standing out on the cupping table this season, and Mr. Tadese Teko is no exception. Grown and harvested on his 8.0 hectare farm near Worka town in famous Yirgacheffe, the perfectly cool, higher elevation microclimate allows the area's Heirloom varieties to develop a distinct orange flower, stone fruit-forward character. Delicate fermentation and thorough washing distill elegance from the orange fruit gem before you. Light roasting preserves what is good and juicy about this beautiful single farmer lot. Expect yellow peach, a lime-like tanginess, and perfumy bergamot aromatics, especially if you give this coffee a couple weeks off-roast.
Roast: Light - Rest ~2 weeks prior to brewing for best results.
Process: Washed - picked ripe and depulped, then open air fermented for 8-12 hours. Washed and sorted, then dried on raised beds for ~10 days.
