Breathtaking Lake Atitlán cools its surrounding rich volcanic hills with winds that create microclimates uniquely suited to specialty coffee. AProCafé farmer-members embrace this beauty with organic practices (like vermicompost) to sustain the land, water, and a range of Arabica varieties among shade trees and crops.
For this microlot, hand-picked Gesha varietal cherries grown on an experimental plot near San Pedro La Laguna were cupped and classified by quality and cup profile. A selection of Gesha was chosen for its harmony of Ethiopia-like varietal character and exemplary Lake Atitlán terroir - blended into the creamy, aromatic coffee you're enjoying. Light roasting preserves delicate florals and brighter notes, encouraging high-toned sweetness and elegant aromatics, just incredible across brew methods, especially at longer ratios.

Process: Washed - 36 hours in cherry, 24 hours depulped fermentation, then washed clean of mucilage, The parchment coffee is dried on raised beds over the course of 10-14 days.
