La Antigua's cobble stone streets lead to volcanic vistas and the local coffee farms surrounding the old capital city. Anna Maria and Estela Durán keep the local tradition alive on San Carlos, a small family farm passed down since 1850. Under the supervision of friend Josue Morales, 100-135 year old Bourbon varietal coffee trees are harvested only every other year (versus every year), leaning into the coffee trees' natural cycle and extending their productive lifespan. Uniquely, the old growth trees are trained and pruned to arc and bend back towards the ground, increasing reachable cherry on a typically lower yielding variety like Bourbon. With cool nights and plenty of shade, San Carlos enjoys a long growing season, resulting in better than average yields and a super sweet, flavorful cup profile. Washed processing at Josue's nearby mill, La Esperanza, curates a well-sorted, exquisitely and gently fermented, yet remarkably juicy and clean lot. Our light-medium roasting plays with that juiciness, juxtaposing sweet chocolate and hazelnut with jammy peach in a way that feels like an ideal Summer-Fall cup
