Young producers like Roger Dominguez are integral to the future of coffee, but we're also here for his stunning work in the here and now. In the cool hills of Marcala, Roger owns three small farms that grow an attractive collection of heirloom arabica, but also the future of coffee cultivars like Parainema. This variety's story starts as the Timor hybrid in the 1950's, journeying from Timor to Costa Rica, before further generations of selections produced in Honduras led to what you're tasting today. Roger pushes the fermentation of his Natural process to yield a decadent overlay of winey purple fruit. We capture this distinction through a light-medium roast, ensuring floral, juicy cups that begin peaking around two weeks off-roast.
