Young producers like Roger Dominguez are integral to the future of coffee, but we're also here for his stunning work in the here and now. In the cool hills of Marcala, Roger owns three small farms, including Las Flores, that grow an attractive collection of heirloom arabica like Bourbon and Catuai. We love Bourbon and like Catuai pretty well, but it should be noted that Roger's Catuai lot received an incredible 92 point cup score at the Honduras Cup of Excellence! Thanks to his high standards and attention to details like ripe picking and slow drying on raised mesh platforms, Roger is able to elevate varieties like Catuai and even hybrids! In production, Sr. Dominguez pushes the fermentation of his Natural process to yield a decadent overlay of winey purple fruit. We capture this distinction through a light-medium roast, ensuring floral, juicy cups that begin peaking around two weeks off-roast.
