Big, sweet, and bright, SL-28 varietal coffees from Kenya are among our favorites. Although very clean from being well sorted and fully washed, Gititu Coffee Factory's two long soaks add a sweetly fermented character while maintaining the famous effervescence that comes in part from phosphorous in the red clay soil. Just north of the capital Nairobi, urbanizing Kiambu County is one of the growing regions that excites us most. From the region's eldest coffee cooperative, Gititu Farmers Cooperative Society, comes a special microlot separation of the 1,000 smallholder member's Peaberry sorted selection. Peaberries are the smallest screen size of Kenya's three grades. These mutations develop as an "only child" seed in the berry, rather than the usual "twins". Peaberries are round and quite dense, making them unique to roast and flavorful in the cup. Light-medium roasting tames what could be a bracing acidity, creating a rich fruit profile of peaches and oranges with a background of browned sugars. Filter and cold brews are an excellent idea, but don't sleep on espresso if you like a juicy shot!
Roast: Light-Medium - Rest ~2 weeks prior to brewing for best results.
Process: Fully Washed - At intake, the Cherry Clerk oversees meticulous visual sorting and floating, accepting only dense, ripe cherry. After intake, cherry is pulped and fermented for ~ 48 hours. Following fermentation, the coffee is washed clean and graded in channels. The parchment is laid to dry on raised beds, rotated often by raking to ensure even drying. They cover drying parchment during the hottest time of day to maintain slow, even drying and at night, to shelter from moisture. It takes ~ 14 - 21 days for the parchment to dry.
