The cloud forests along the buffer of the El Triunfo Biosphere Reserve allow the producer-members of the Comon Yaj Noptic Cooperative to nurture their coffee plants - and they in turn work together to sustain their fragile and profoundly ecologically-diverse surroundings. Intentionally tight-knit for a co-op, the one-hundred sixty strong collaborate and all have a say in how they proceed. Among the outcomes are a clean washed process, Fair Trade and Organic certification, benefits like technical services and internal credit, and a rich, smooth coffee that reminds us of sweet chocolate and Amaretto. Medium-dark roasting underscores this coffee's sweetness and body, suiting it perfectly to richer preparations of espresso, press pot, and batch brews.
Roast: Medium-Dark
Process: Fully Washed - Ripe berries are depulped. The parchment is soaked for 12-18 hours, then washed clean of its mucilage before being set to dry on concrete patios.
