A coniferous cloud forest cradles the mountain town of Jesús María, providing an ideal setting for growing sweet, flavorful coffee in dark, nutrient-rich volcanic soil. Living remotely along the border of Puebla and Veracruz, hundreds of smallholder farmers now earn better return for selling their freshly picked coffee cherry to APG's wet mill, named for early 20th century exporter Antonio Pérez-Redondo Galvan. Fourth generation descendants like Ernesto Perez now guide APG and utilize a traditional fully washed process to produce a classically sweet and balanced cup. Low in fermentation, high in sweetness and body, and perfectly balanced from medium roasting, Jesús María brews ideally across all brew methods at a minimum of 4-6 days off-roast.

Process: Washed - Cherries are transported from collection points to APG's nearby wet mill every two days. The coffee is being fermented in its fruit during this period. Once at the mill, the cherries are analyzed, sorted for quality, and depulped. This lot receives a relatively short fermentation of 24 hours in concrete tanks before being fully washed using spring water. The clean parchment coffee is then dried in guardiolas at stable temperatures to achieve uniformity and longer life.
