David Ojeda dedicates life on his small farm to family. Working together on Finca El Palto in Cajamarca, Las Ojeda practice the discipline of farming and producing coffee traditionally, striving for holistic wellness, sustainability, and quality. To those ends, just about everything from ripe picking to sorting is done by hand. Although labor intensive, their collective efforts bear fruit in the cup, cultivating the exquisite Gesha variety into a vibrant, elegant coffee that features sweet lime and orange, earthy sugars and milk chocolate, and florals like jasmine and apricot. Las Ojeda utilize a washed process to highlight the juiciness and elegance of this coffee, yet thirty hours of fermentation do pop with an undercurrent of raspberry candy. Light roasting brings it all together, showcasing the harmony between a delicate Ethiopia landrace variety and the fertile, medium-high tropical highlands that make the Andean terroir of Perú so special. Pour overs and other by-the-cup methods are incredible, but special mention to longer espresso pulls.

Process: Washed - Only the ripest cherries are harvested by hand. The coffee is depulped, then fermented for 30 hours in bags. followed by a washing off of the mucilage in a vat tank. The parchment coffee is dried in bubble tents over 15-20 days.
