Cyato Honey Anaerobic from Rwanda grabbed our attention with its bouquet of sugary fermentation flavors. Hershey's kiss, cascara (dried coffee fruit), and cherry cola pop alongside a tropical brightness at a light roast.
Abadatezuka Cooperative members live around high-elevation Lake Kivu and deliver their organically-grown and ripely-picked Red Bourbon fresh to Cyato Coffee Washing Station. In this case, the ripe berries are depulped, then dried anaerobically in airtight barrels while the parchment remains in its mucilage (a sticky, sugar-rich, pectin-heavy layer of fruit pulp). Slow drying locks in sweetly fermented and floral aromatics, yielding a bright, creamy cup that makes super sweet by-the-cup brews and longer espresso pulls.
