Ten years ago, Bernard Uwitije recognized the potential for excellence in the people and land around
Ibisi bya Huye Mountain in southern Rwanda. Ibisi Mountains Coffee Washing Station was built in 2017 and currently produces on behalf of 2,000+ smallholder farmers who harvest ripe Red Bourbon cherries during the rainy months of March - May. A classic Arabica variety, Red Bourbon showcases superlative sweetness and balance in structure, while yielding a crisp acidity and harmonious fermentation from being water soaked during a fully washed process. We're pleased to roast Lot #84 of this season's harvest on the lighter side, highlighting an electric extraction, full of tropical, red berry, and stone fruit. Give this high-elevation juice bomb two to three weeks to open up, and it'll brew beautifully bright cups.
Roast: Light
Process: Fully Washed - The freshly-delivered cherries are floated and separated for quality before being pulped and wet fermented. The fermented coffee is then washed clean and sorted by density in grading channels. Post-soak, the wet parchment is shade-dried for 24 hours before being sun-dried on raised beds for fifteen days. The drying parchment coffee is meticulously hand sorted to help ensure a clean cup.
